Diacetyl

Synonyms: 2,3-butanedione
IUPAC Name: butane-2,3-dione

Often used to formulate butter type flavours, it also find use in small amounts in fruit flavours, nut and coconut formulations. In 2007, the Flavor and Extract Manufacturers Association recommended reducing diacetyl in butter flavorings, though in beverages it is currently not a product of concern because of its potent flavour even in tiny amounts.
