Cassia bark oil is a more intense cinnamon flavour compared to true ceylon cinnamon oil and cassia oil is often less expensive so it finds greater use in the beverage world. Cassia oil provides a warm, spicy flavor.
Extracted from the bark of the Cinnamomum cassia tree, predominantly found in China. It has a stronger, more intense aroma and flavor compared to true cinnamon. It’s often described as being sharper, hotter and somewhat more bitter. Commonly used in spiced teas, seasonal drinks, alcoholic beverages, craft sodas, and flavored syrups. It imparts a robust, warm, and spicy note. Generally considered to be less subtle and more pungent than true cinnamon.
